summer noshes

 
 
 
the seasonal bounty is always delightful. Here I

blanch the squash and
mix a dressing in one of my favorite bowls.
hemp oil,(too)much
sesame oil, just a dash and
red
walnuts

make this particular version of the dish my fav.
to share
and left over
for a room temp snack at
the river the next day.

  1. Heather Saltzman: Hi Love! Salad looks delish! I didn't see what acid you use for the dressing. Just hemp oil, sesame oil, walnuts.... No vinegar, lemon juice, acidic ingredient, etc..? The hemp oil is wonderful in terms of omega-3 and omega-6 fats.. And I consider walnuts to still be the underestimated super nut. Along with being a great source of omega-3's, walnuts are also a great source of vitamin E, manganese, magnesium, calcium, potassium, and tryptophan, and are particularly beneficial to men and cardiovascular health. Walnuts have also been shown to have anti-cancer properties, help with metabolic syndrome, and type 2 diabetes in that studies have shown the consumption of walnuts to aid in better blood fat composition (including less LDL cholesterol and less total cholesterol). Walnuts also help with excessive clotting and inflammation.. Squeash is great too.. Tons of vitamins, anti-inflammatory props, anti-cancer benefits, helps with prostate health..

  2. It's good you asked! I used Jeff's best hemp oil. Simply the finest http://jeffsbesthemp.com/wordpress/
    and both fresh lemon and lime juice. I also added a dash of marukan rice vinegar (as it also contains a 'mother', much like braggs apple cider, but has a lighter flavor.
